In my last post I mentioned that we were freezing potatoes because they were beginning to sprout. Since some of you were not familiar with this process I decided to post how to do it. Listed below is my mom’s method for freezing potatoes.
1. Peel and wash potatoes
2. Boil for 10 minutes
3. Drain and add cold water and ice to cover the potatoes. Let set until cool.
4. Drain again and place in containers for freezing. You may want to cut larger potatoes to make it easier to put in containers.
5. Place containers in freezer.
Preparing potatoes after removing them from the freezer.
1. Thaw and drain potatoes.
2. Place in frying pan with oil, salt, and pepper. Cook until brown, stirring occasionally to brown all sides of the potato.
