Fall Garden Update – Pumpkin Season


The answer is 289.  What is the question? You have to read all of my post to find out.

This year I planted a few hills of pumpkin in a corner of the garden.  I wound up with 25 pumpkins!  I have harvested about half of them.  The rest are not quite ready according to the all knowing knowledge source – You Tube!!  I planted some last year but only had one pumpkin and I accidentally ran over it one day while bush hogging.  We have canned 7 quarts and made a few pies already.  I am going to start looking for a few more pumpkins recipes!

Many people talk about how hard pumpkin is to cook.  Here is a method that has worked for us.  Cut the pumpkin in half and remove the seeds and “innards”.  Place the cut side down in a metal pan and place about 1/2 inch of water in the bottom of the pan.  Bake in the oven at 450 degrees for 45 minutes to an hour.  Check with a fork to determine when it is done. You can then scoop the pumpkin out of the skin with little trouble.  WARNING –  Do not use a glass pan.  We had one break with us when we tried it.  I think we let it cook too long and the water boiled out of the pan!
