I recently mentioned that my mom made some Christmas pickles this year and several people wanted to know what they were so I decided to post the recipe. These are for cucumbers that have gotten a little too large for normal pickles.
1 Gallon Medium Cucumbers
4 cups Vinegar
4 Tbsp. Alum
4 Tbsp. Plain Salt
4 Tbsp. Pickling Spices or your choice of Spices
Wash cucumbers and place in a gallon glass jar. Mix alum, salt, vinegar, and spices and pour cold mixture over cucumbers. Finish filling jar with cold water to cover the cucumbers. Place lid on tight and put in a cool place until 2 or 3 weeks before Christmas. Take out, wash, and slice or quarter and put back into clean jar. Add 6 cups of sugar and 2 or 3 Tbsp. of water. Put lid on, shake, and put in refrigerator for several days, or until sugar dissolves.
